In a highball glass, add a small handful of mint and lightly press using a muddler.
Add all ingredients except for club soda.
Fill glass ¾ full with crushed ice, and add club soda, top glass was more crushed ice and garnish with a bouquet of mint.

Shake and strain over ice in a rocks glass.
Finish with fresh mint leaves and a jalapeno slice for presentation.
